MAC & CHEESE

An unhealthy amount of butter (1 stick ... at least)
1 lb Large Elbow Macaroni
1 Large Onion
3 Cloves Garlic
3 Tb Flour
5 Cups Milk
1/3 lb Cheddar Cheese
1/3 lb Mozzarella Cheese
1/4 lb Parmesan Cheese
1 lb Cooked Meat (if desired)
1 Cup Panko Bread Crumbs
2 Tb Chopped Fresh Parsley
Paprika
Mustard Powder (or prepared mustard)
Salt
Pepper
- Preparation
Clean the kitchen: all dishes cleaned and put away, all surfaces wiped down and sparkly
Chop the Onion, place in it's own bowl
Mince the Garlic, place in it's own bowl
Shred all the cheese, can all be in the same bowl EXCEPT reserve half the Parmesan in it's own bowl
Chop the Parsley ... yup, own bowl
Make sure the spices are handy
Grease a 9X13 pan
Preheat oven to 400F
- Start Cooking
Prepare Macaroni as directed on the package EXCEPT only cook it for half the time. (make sure you put a good amount of SALT in the water even if not called for) When the MAC is done, strain and place back in the pot with 2 Tb butter. Make sure the butter is melted and coating all the pasta.
While that is going on, put the MILK on the stove and warm it up
Melt 4 Tb BUTTER in a frying pan, add the ONION and sauté until the onion is slightly brown. Add the GARLIC and sauté for another 30 seconds.
Add the FLOUR and cook for a couple minutes until the flour is fully paste
Start adding the warm MILK a cup at a time. Add another cup after each cup is fully integrated into the gravy.
When all the milk in in there TURN OFF THE BURNER, add all the CHEESE (except the reserved parmesan) (might want to do this a little bit at a time as well) and stir until all melted in.
Add 2 heaping teaspoons of MUSTARD (either the power or prepared), SALT and PEPPER to taste.
Here is where you can add some cooked meat if you care to: ground beef, cut up hot dogs, diced ham, etc.
Add the cooked PASTA to the sauce, or the sauce to the PASTA and stir to combine
Put the whole sticky, cheesy mess into the greased 9X13 pan. Sprinkle the reserved PARMESAN cheese over the top and place in the oven for 20-25 minutes ... until good and brown on top.
In the meantime, Brown the PANKO BREAD CRUMBS in a pan on the stove. Melt 2Tb butter. Add the bread crumbs and the PARSLEY and fry, stirring frequently, until golden brown
When you pull the pan from the oven, sprinkle the bread crumbs over the top. Allow to sit for at least 5 minutes before searving.
Seafood Gumbo

I found this recipe searching the Internet in 1998. I was looking for a gumbo recipe, not a book providing "an in-depth explanation of how today's integrated circuits work, how they are designed and manufactured, and how they are put together into powerful and sophisticated electronic systems." I have never purchased or read the book, but it sounds like a good one.
